Sage has been used for centuries for a wide variety of culinary uses. This hardy evergreen shrub is easy to grow and long-lived. The scent is enticing and fabulous. Sage is a shrubby plant that produces many side branches of velvety, gray-green leaves about 5cm (2in.) long. Pink flowers appear in summer, attracting butterflies and bees. The plant grows up to 60-80cm (23-31in.) in height and 80cm (31in.) in width. Pick sage leaves as needed when the plant is well established and well branched - 75 days is a guideline, but individual plants will vary depending on conditions. Stop harvesting in the fall so the plant can winterize outdoors in the garden or in containers indoors. Sage will become woody and slightly leafy in about 4 years. If you are growing it for culinary purposes, it is best to remove the entire plant and grow new ones again.
