Red komatsuna, known as Japanese mustard spinach, is a fast-growing, Asian salad green with large, lilac-red leaves filled with mustard and cabbage flavors. Harvested from the baby leaf stage to full maturity, its young leaves have a more mustardy flavor, while the older ones taste like cabbage. It is grown in Japan, Korea and Taiwan, where it is used as a cooking leaf, like cabbage or Swiss chard, and in fresh, raw salads. Gentle, soft, glossy leaves up to 25cm (10in.) long, softer than most types of mustard. Perfectly resistant to cold, while drought-resistant and tolerates heat, it is easy to grow throughout the year. You'll have small plants in about 30 days or full-sized plants in 70 days, and you can grow and harvest at any time of the year.
